When the Austrian Empire collapsed in 1918, three priceless cultural treasures survived the catastrophe: the venerable name of Austria itself-applied to a smaller area after the independence of Hungary, Czechoslovakia, and other parts of the realm; the imperial palace, galleries, museums, collections and gardens they were nationalized; and Austrian cooking. I don't intend to praise or give a course in Austrian cooking, but simply to bring to your attention some recipes which are somewhat related to the Austrian army. So here we go for you "Husaren." HUSARENKRAPFERLN Doughnut-like cookies for hussars 1 1/4 cubes butter
Cream the butter, sugar and yolks. Mix the flour and vanilla. Form small balls on a cookie sheet, make a depression on the top of each with a thimble; brush with beaten egg and sprinkle with the finely chopped almonds. Bake at 350F. (175C.) for 15-30 minutes until brown and sprinkle powdered sugar over them after baking. Before serving, fill the depression with jam. This yields about 35 doughnut-like "Krapferl." These are ideal as wargamers' treats (and may even sweeten them up a bit!).
