RR Honeymoon Variant

Mayfair rail games work pretty well for 2, if you use the "honeymoon variant". (The main change these rules make is that it lowers the maximum number of players who can build track to small city to one--so there is some more competition in building. There isn't a lot of interaction in any of these games, the fewer players means less downtime between turns.

One hint is to pick a game with familiar geography: Empire Builder, British Rails and Euro rails are most familiar to most players. Nippon plays well for 2 or 3, but the unfamiliar place names can be a hindrance.

I usually use variants to have 2 trains and 4 load cards which really speed up play.

The point of most two player games is conflict. She might like Starship Catan, which is a game of exploration rather than conflict.
