Yes, this can be done. I'd advise a bit of practice first, but once you get the hang of it you should find you can do it consistently. Supplies:
X-Acto Knife (with new blade) SprayMount or Super 77 Foam Core White Artist Tape My advice is to get a piece of foamcore slightly larger than the map to be mounted. As above, spray the back of the map and then mount to the foamcore. I usually mount from one corner out to ensure no wrinkles. Next you can easily trim the foamcore around the edges to match the map size. Personally, I find this easier than the stress of trying to perfectly align while mounting. YMMV. Now, the "trick". Foamcore has two strong tough facing sheets, but the foam in the middle is quite soft. So, flip the map face down. Now, with some care you can cut down through the top layer and the foam, leaving the bottom (adhered to map) facing and the map intact. For a thicker original map material you will want to do this in two slices about 1/16" apart straddling the fold. Now you should be able to fold the map face sides in. I like to neaten it up with the artist tape. Simply place the map in the closed position and tape the seam. You need to have made the wider slices in the foamcore so that the map will still lay flat when opened. Note: It is important that the X-Acto knife is held to make vertical (not angled) cuts through the foamcore. This can be done by using a metal straight edge and making the cuts using repeated smooth passes. Practice before starting in on your good maps! Hope this helps!
